The scanner uses near-infrared light to analyze the avocado. When the fruit is held up to the sensor, the device measures how different wavelengths of light are absorbed and reflected. This data can be used to estimate factors such as dry matter and moisture content, which are closely linked to ripeness and firmness.
The result appears on the screen within seconds, showing whether the avocado is still firm, ready to eat, or very ripe. This helps shoppers pick fruit based on when they plan to eat it while reducing unnecessary squeezing and produce damage.
